To kick off our relationship, forgive me for bringing up my ex Lam Yên.
So what makes Lam Yên stand out?
Setting aside the whole team’s hard work behind where it is today, it comes down to two things for me: ingredient and technique.
1
Ingredient
Lam Yên was the first to use Cốm Tú Lệ↗ (opens in a new tab), instead of Cốm Làng Vòng or others, for its signature cốm xào (stir-fried young green rice), which is really the soul of the product. Grown in the Northwest mountains, with their special soil, water and climate, Tú Lệ gives the cốm its distinctive texture and color: firm, chewy grains and a deep jade green.
2
Technique
The owner’s secret technique is what makes the cốm xào what it is, batch after batch. The grains never turn mushy, so you can still feel every plump, milky, fragrant grain, and the green is all natural, with no food coloring.
Those two things are why I fell in love with Lam Yên and truly believe in it. And I found the same thing in Mùa.
We share the same values.
Embrace Vietnamese ingredients and nature
You already cherish Vietnamese ingredients and let the seasons lead. With your dedicated technique in collaboration with Heiwa, you bring guests products and experiences at their very best.
I cherish that too: the variety and quality of Vietnamese ingredients, and the care and rigor it takes to work with them.

Connect nature with culture
Lam Yên found its way into how Hanoians enjoy treats and give gifts.
With Vietnam’s nhậu culture and Mùa’s own ecosystem, I’d love to work with you to:
1Make Mùa Craft Sake part of every good time and every get-together for young Vietnamese.
2Make Mùa the go-to name for distinctive, high-quality Vietnamese craft sake, made with Vietnamese ingredients in Vietnam, and loved at home and abroad.
3Grow beyond Mùa Taproom and Mùa Sando. If we turn out to be a good fit, I’d love to help nurture all of Mùa’s “children” and grow alongside them.
Established in 1997, Indochine House is a commercial art gallery specializing in Asian art, from Chinese ceramic and Vietnamese antiques to modern and contemporary paintings.
Returning to the art market in 2021 with the concept of “Art for Living,” the gallery brings together paintings from EBAI (École des beaux-arts de l’Indochine), antiques, and decorative objects.
Acculturation
Acculturation is what happens when cultures meet and keep flowing into one another.
Full Stack Marketer
Borrowed from tech: a Full Stack Developer builds both the front end and the back end of an app.
A Full Stack Marketer can handle every function of a marketing team. It suits small and mid-sized businesses with a distinctive product, especially local F&B brands. Usually it’s someone with one standout strength (content, research, ads…) who stays flexible: learning the rest, finding outsourced partners, and running many kinds of marketing activity to reach the brand’s goals.
Mono Coffee Lab
A sustainable café, nurtured by people and warm service since 2019, now with four locations.
123 Restaurant is a family restaurant with a 30-year history and three locations in Hanoi. Serving a wide variety of rice and noodle dishes, it brings the best of everyday meals to the table: piping hot, generously portioned, and full of the comforting flavours of home.
About Lam Yen
Lam Yên is a Vietnamese confectionery brand rooted in Tú Lệ young green rice ( Tú Lệ) and the creativity of reimagining traditional cốm into modern treats, best known for Cốm Xào Mooncakes and Fresh Cốm Mochi.
With handcrafted products made fresh daily and no preservatives or additives, Lam Yên brings a fresh take to a cherished Northern Vietnamese delicacy.
About Cốm
Cốm, or young green rice flakes, is a traditional delicacy from Northern Vietnam, deeply associated with the arrival of autumn in Hanoi. Traditionally made in the autumn harvest, this humble gift from the land carries a fresh, grassy fragrance and a delicate sweetness.
Wrapped in lotus leaves and enjoyed a pinch at a time, Cốm invites you to slow down and savour its soft, chewy texture and subtle nutty, buttery notes.
Store Opening
Four years of selling online, a year of brand building, and one team pulling together: Lam Yên opened its first physical store in Hanoi.
